On a recent adventure to use up this jar of Tahini I bought, I searched for an energy bar recipe using whole-food ingredients and easy instructions.
I love to make my own protein bars, granola bars and energy bars when I can. I like that I can use high-quality ingredients and be more cost-effective than buying high quality pre-packaged products. I use them as a snack before or after the gym or as a post-dinner dessert with some tea!
I found this recipe from Clean Lean Bakes and was really happy with how easy it was to make and how delicious the result was! I shared my adaptation of the original recipe below!
Ingredients
1 cup quick cook oats
1/4 cup chopped dried prunes
1/4 cup chopped pitted dates
1/2 cup tahini
1/3 cup honey
2 tbsp ground flaxseed
2 tbsp chia seeds
1 tsp pure vanilla extract
1/2 tsp cinnamon
1/4 tsp pink sea salt
1/4 cup dark chocolate chips
1 tsp coconut oil
Instructions
Line a loaf pan with parchment paper (this makes clean-up a breeze!)
Add ingredients from oats to salt into a large mixing bowl & mix until combined.
Transfer mixture into loaf pan and press firmly and evenly into pan. You can fold the parchment paper down over the mixture and use your hands or a spatula will work too.
Place loaf pan + mixture into freezer or fridge while you prepare chocolate topping.
Add chocolate chips and coconut oil into a microwave-safe dish and microwave for 30 seconds, stirring occasionally, until melted.
Remove bars from fridge/freezer and chocolate mixture over top. You can use the back of a spoon to to spread it evenly or I tilted the pan to get into the corners.
Place back into fridge to harden for 30-40 minutes or more.
Remove bars from pan using parchment paper and place onto cutting board. Cut into long bars or squares.
Store in fridge for up to 1 week or freeze in airtight container for later – enjoy!
